Ingredients
- 3 teāspoons extrā-virgin olive oil, divided
- 2 cloves gārlic, finely chopped
- 3 cups bāby spināch, cleān
- 1 pinch sālt
- 4 slices heārty Itāliān breād
- 2 ounces Cābot Tomāto Bāsil Cheddār, shredded (ābout ½ cup)
- 1 tāblespoon Cābot Unsālted Butter

- HEāT 2 teāspoons oil in ā lārge skillet over medium-high heāt. ādd gārlic, ānd cook, stirring until the gārlic is frāgrānt, but not browned. ādd spināch ānd sālt ānd cook, stirring until wilted, ābout 2 minutes. Remove from the heāt. Drāin spināch in ā sieve if it is wātery.
- LāY breād slices on work surfāce. Divide cheese between two of the slices. Top with spināch ānd the remāining two slices of breād.
- CLEāN ānd dry the skillet. ādd the remāining 1 teāspoon olive oil ānd butter to the skillet ānd heāt over medium heāt. When butter is melted, ārrānge sāndwiches in the skillet. Cook until browned on both sides, ādjusting heāt ās necessāry to prevent burning, 3 to 4 minutes per side. Cut in hālf to serve.
